RICE

Super Grain

Rice is the seed of the grass species Oryza sativa (Asian rice) or Oryza glaberrima (African rice). As a cereal grain, it is the most widely consumed staple food for a large part of the world's human population, especially in Asia.Rice is often known as the cereal of prosperity. Being the most important and most consumed food on the planet, it makes for some truly delicious dishes. It happens to be mankind’s third-largest food crop and is the staple diet for two thirds of the world’s population. Imagine precision rows of sparkling green stalks shooting up to reach the summer sun, being able to independently supply 20% of the world’s energy. The Asia-pacific region of the world harvests & consumes 90% of the rice on the planet. It is beautiful when harvested, beautiful once threshed. In the Unites States, the rice export industry alone is worth $2.2 Billion a year .Basmati from India, Jasmine from Thailand and Arborio from Italy are the most popular ones, with over 40,000 varieties among them alone! Uncooked, par-boiled and cooked rice are available in short-grain white, brown, yellow, purple, red, black or even other shades with subtle texture/flavour variations.

RICE PROCESSING

Fully automatic rice mill plant includes, pre-cleaning, dehusking, paddy separating, milling, grading etc.
Pre-cleaning process consists of two procedures, cleaning and de-stoning. Paddy cleaner is the most essential equipment in a rice mill, as it separates all the impurities like dust, straw, sand, clay and heavy particles of even an uneven sizes from paddy.
Rice dehusking is a process of removing the husk and bran from the paddy rice and producing head white rice grains that are sufficiently milled, free from impurities and contains minimum number of broken grains.
Paddy Separator separates the unhusked paddy from the brown rice.
Whitening: The Rice milling is the process that helps in removal of hulls and bran’s from paddy grains to produce polished rice. White rice is the result of further milling by machines that rub the grains together under pressure. This abrasion removes the bran layers, revealing “white” or “polished” rice.Rice milling machines are used.
Rice Grading has several advantages: (1) immature grains are separated; (2) a more precise adjustment of the huller is possible, which minimizes breakages; and (3) independent milling of graded lots is possible. Weighing and bagging : Preparing the milled rice for transport to the customer.

Basmati Raw White Rice

Perhaps the most famous aromatic rice, basmati is grown in India and Pakistan. It has a nutlike fragrance while cooking and a delicate, almost buttery flavor. Unlike other types of rice, the grains elongate much more than they plump as they cook. Lower in starch than other long-grain types, basmati grains turn out fluffy and separate. Although it is most commonly used in Indian cooking, basmati can also be substituted for regular rice in any favorite recipe

Bamati_brown_rice_1400x.jpg

Basmati Brown Rice

This rice has had only its husk removed during milling, thus it is naturally high in B vitamins and minerals. Because brown rice has its germ, it also has some vitamin E. Brown rice has a richer flavor and a chewier texture than white rice, and takes longer to cook

  • Natural 100% whole grain product.

  • Only the outer hull has been removed.

  • Rice germ and bran layer remain on each kernel.

  • Slightly chewy texture with a nutty flavor when cooked.

  • Use as an ingredient in main course, side dish or salads

Basmati Steamed Rice

Pusa Basmati 1121 (PB 1121) Steamed Rice is a landmark Basmati rice variety having Basmati quality traits introgressed from traditional Basmati varieties such as Basmati 370 and Type 3. It was released for commercial cultivation in 2003. It possesses extra-long slender milled grains (9.00 mm), pleasant aroma, and an exceptionally high cooked kernel elongation ratio of 2.5 with a cooked kernel length of up to 22 mm, volume expansion more than four times, appealing taste, good mouth feel and easy digestibility. Owing to its exceptional quality characteristics, it has set new standards in the Basmati rice market. The cumulative foreign exchange earnings through export of PB 1121 since 2008 have been US$ 20.8 billion, which has brought prosperity to millions of Basmati farmers.

Basmati White Parboiled Rice

Prior to milling, the paddy rice is soaked, steamed and dried. This causes the nutrients to be retained and pass into the kernels adding nutritional value. Besides being paired with savoury dishes such as curries, casseroles, this rice is ideal with stir fry dishes and salads

  • Rice undergoes a steam and pressure process, called parboil, to create separate kernels when cooked.

  • Golden color and firmer texture when cooked.

  • Golden color comes from bran layer being forced into the kernel during the parboil process.

  • It is not precooked; follow cooking directions on package.

Basmati Golden Parboiled Rice

The process of parboiling allows the rice to retain more of the vitamins and minerals from the original grain. The procedure alters the texture and guarantees a more separate and firm grain upon cooking.
One serving of parboiled rice is both cholesterol and gluten free. It is low in sodium and saturated fat.
Rice provides complex carbohydrates used by the body for energy.

Thai Hom Mali Jasmine Rice

Jasmine rice is originally from Thailand and is commonly used in Southeast Asian cooking. This is a long grain
variety of rice that has a subtle floral aroma and a soft, sticky texture when cooked. The grains are also shorter and thicker than basmati rice. Before cooking it’s important to wash the rice to remove any dust and excess starch. Jasmine rice is traditionally cooked by steaming or using the absorption method, which simply means the it’s cooked in a measured amount of water which is completely absorbed by the rice.

Although this sticky rice is perfect with Oriental food, it is also ideal with all savoury dishes and makes an excellent rice pudding. Cold cooked Fragrant Jasmine is wonderful to use as fried rice – the lightly sticky grains separate when re-heated.

Jasmine Fragrant Rice

Thai fragrant rice) is a long-grain variety of fragrant rice (also known as aromatic rice). Its fragrance, reminiscent of pandan (Pandanus amaryllifolius) and popcorn. In typical packaging and storage, these aroma compounds dissipate within a few months. This rapid loss of aromatic intensity leads many Southeast Asians and connoisseurs to prefer each year's freshly harvested "new crop" of jasmine rice. Jasmine rice is grown primarily in Thailand (Thai fragrant rice), Cambodia (angkor kra'oup or Cambodian jasmine rice), Laos, and southern Vietnam. It is moist and soft in texture when cooked, with a slightly sweet flavor. The grains cling and are somewhat sticky when cooked, though less sticky than glutinous rice (Oryza sativa var. glutinosa), as it has less amylopectin.

LONGGRAIN.jpg

Long Grain White Rice

Long grain rice has a long, slender kernel three to four times longer than its width. Due to their starch composition, cooked grains are lighter, fluffier and more separated than medium or short grain rice. Long grain rice works well in such dishes as pilaf, stir-fry, salad, soup and Southern favorites like jambalaya and gumbo.

arborio rice cooked.jpg

Arborio Rice

Arborio rice is an Italian short-grain rice. It is named after the town of Arborio, in the Po Valley, which is situated in the main region of Piedmont in Italy. Arborio is also grown in Arkansas, California, and Missouri in the United States. When cooked, the rounded grains are firm, and creamy and chewy compared to other rices, due to their higher amylopectin starch content. It has a starchy taste and blends well with other flavors. Arborio rice is often used to make risotto; other suitable varieties include Carnaroli, Maratelli, Baldo, and Vialone Nano. Arborio rice is also usually used for rice pudding. Arborio is a cultivar of the Japonica group of varieties of Oryza sativa.
